Perhaps known best for its sweet pork, stuffed inside a burrito or tossed into a salad, fast-casual chain restaurant Costa Vida appears headed to Gilbert’s SanTan Village mall area.
Valley entrepreneur Dano Dayton, who owns multiple Costa Vida franchises in Arizona, has submitted development plans for a new 5,400-square-foot restaurant at the northeastern corner of Market Street and Pecos Road in Gilbert.
The proposed location is directly west of Costco and across the street from WinCo Foods in the heart of Gilbert’s bustling central business district. Dayton said the restaurant should be open by the third quarter of 2015.
Preliminary plans show a two-story building with the kitchen, indoor dining room, outdoor patio and drive-through on the first floor and space for dry storage above. The architectural designs still require approval from Gilbert’s Design Review Board before the project can move forward.
